SatviK Veg Mix Without Coconut

About the Recipe

A delicious sabzi without coconut and made with a variety of veggies is called satvik mix veg. The veg mix goes well with white rice or chapati. Ecobake Non-stick liners help in steaming the veggies without the need for additional cleanup.

Ingredients

 

  • Cauliflower, Capsicum, Carrot, Beans, Potatoes and Corn
  • Clove - 2, Cardamom - 1, black pepper corns - 5 to 6
  • Tomatoes - 2, Cashews - 8 & green chillies - 1
  • Mustard oil - 1 tbsp, bayleaf - 1, cumin seeds, dry red chilli - 1
  • Turmeric powder, dry coriander & garam masala - 1/2 tsp
  • Salt - 1 tsp, paneer, fresh coriander & Ginger - 1 inch

Directions

 

  • Chop all the vegetables and keep them on a plate. Transfer them into a steamer lined with Ecobake Non-stick liners. Boil the vegetables by keeping the steamer in a vessel with boiling water.
  • Steam the vegetables for 15 minutes or until they are cooked. In a mixer jar, grind together cloves, cardamom, black peppercorns, tomatoes, cashews, green chillies, and ginger.
  • In a pan, heat mustard oil, add cumin seeds, bay leaf, and red chilli and sauté well. Add turmeric powder, dry coriander powder, and garam masala to the pan and give them a good mix.
  • Add the puree to the pan once the raw smell of the masalas is gone and mix well. Once the oil oozes out of the mixture, add the boiled veggies, paneer, and salt to the pan and combine everything well. Garnish with chopped coriander leaves and transfer the Satvik veggie mix to a bowl.
