Simple Pineapple Cake With Tricks

Ingredients

 

  • Oil - 1/4 cup curd - 1/3rd cup sugar - 3/4 cup
  • pineapple essence - 1 tsp, Milk - 1/4 cup + 2 tbsp Maida - 1 cup
  • Baking powder - 1/4 tsp Baking soda - 2 pinches
  • Water - 1/4 cup Fresh pineapple chopped - 1/2 cup
  • Chilled whipping cream - 1 cup & Pineapple essence - 1/2 tsp
  • Sugar - 3 tbsp, corn flour - 1 tbsp & water - 3/4 cup
  • Lemon juice - 1 tsp & Yellow food colour - few drops
  • Golden sugar balls, Cherries & Oddy Ecobake

Directions

 

  • In a sieve, combine the flour, maida, milk powder, baking powder, baking soda, and a pinch of salt. Whisk well until a lump-free, ribbon-like consistency is formed. The batter should then be poured into a cake mould and baked for 45 minutes on low heat.
  • Meanwhile, prepare pineapple syrup by cooking chopped pineapple pieces with water and sugar and filtering the syrup using a strainer. Once done, allow it to cool. Cut the cake into three layers. For frosting, take chilled whipping cream and whip it well, adding pineapple essence.
  • Now spread a little cream on the cake board. Place one layer of cake and coat it with pineapple syrup. Cover with cream and crushed pineapple. Repeat the steps for the remaining cake layer. Smoothen the cake sides with a scrapper and make a pattern with a cake comb.
  • Smoothen the cake's top with a spatula. Prepare the neutral gel with water, sugar, and corn flour, as shown. Add lemon juice and a few drops of yellow food coloring, and mix well. Fill a piping bag with pineapple gel and pipe it onto the top layer of the cake.
  • Make rosettes and leaves with a star-shaped nozzle as shown. Garnish the cake with golden sugar balls and cherries. Make borders at the bottom of the cake with the remaining whipped cream. Your pineapple cake is ready!
