Spinach Fenugreek Bhaji Dhokla

About the Recipe

Dhokla is a savoury steamed cake from the Gujarat region. It is made from Bengal gram and a few spices. Eno is added in dhokla to get a soft and spongy texture. Additionally, a tempering is added on the top and is served with chutney. I have added spinch and fenugreek leaves to give extra flavor and nutrition. Use Oddy Ecobake cooking paper circles to steam the dhoklas to perfection.

Ingredients

 

  • Oddy Ecobake cooking paper circles
  • Rice 3 cups
  • Urad dal 1 cup
  • Moong dal ½ cup
  • Chana dal ½ cup
  • Sooji 3/4th cup
  • Oil 3 tbsp
  • Curd 1 cup
  • Lukewarm water as required
  • Ginger 2 inch chopped
  • Green chillies 5-6 chopped
  • Salt as required
  • Spinach chopped 1 cup
  • Fenugreek leaves chopped 1 cup
  • Coriander leaves ½ cup chopped
  • Carrot 1 grated
  • Chopped green peas ½ cup
  • Asafoetida 1/4th tsp
  • Eno 1 tsp
  • Lemon juice 1 tsp
  • Chilli powder 1/4th tsp
  • Sesame seeds ½ tsp
  • Mustard seeds ½ tsp
  • Green chillies 1 chopped
  • Curry leaves 4-5

Directions

 

  • Take rice, urad dal, moong dal and chana dal in quantities as shown and make into a fine powder. Our dhokla premix is ready. Take 3 cups of this dhokla premix in a bowl and add oil, curd and lukewarm water to make a semi-liquid texture. Let it rest for 20 mins.
  • In a mixer add ginger, green chillies, salt and grind into a paste. Add spinach, fenugreek leaves, coriander in our dhokla batter. Add grated carrot, chopped green peas, add crushed ginger chili paste, asafoetida and salt. Mix everything well. Add eno, lemon juice and little water and give a final mix.
  • Line our baking sheet with Oddy Ecobake cooking paper circles. Pour our dhokla batter and sprinkle chilli powder, sesame seeds on top. Steam for 12-15 minutes. For tempering in hot oil add mustard seeds, asafoetida, green chillies and curry leaves. Let it splutter and pour over the dhokla. Sprinkle chopped coriander on top.
  • Cut the dhokla in equal sizes and serve hot with green chutney. Our Spinach Fenugreek Bhaji Dhokla is ready.
