Sweet Potato Puran poli (bobbatlu)

Sweet Potato stuffed puran poli also called in the South Indian state of Andhra Pradesh as Bobbatlu is a famous sweet recipe. Bobbatlu is made by stuffing the poli (flatbread) with puran, a filling made with chana dal, cardamom, jaggery. Here we have used sweet potato for the filling. Use Oddy Ecoabke to make the puran poli. Since it is non-sticky, keeping the filling and making the shape of puran poli becomes easy.

Ingredients

 

  • Sweet Potato ½ kg
  • Jaggery ½ kg
  • Maida 1/4th cup
  • Turmeric 1/4th tsp
  • Salt 1/4th
  • Ghee 3 tbsp
  • Oddy Ecobake
  • Water

Directions

 

  • In a clay pot add ghee and add washed sweet potatoes, roast a little. Keep a dish on top of the clay pot and add water in it. This will help the sweet potato to cook nicely.
  • Leave a little gap and cook the sweet potatoes for 7-10 mins. Remove once done and let it cool completely. Peel it and mash it nicely with hands.
  • In the same clay pot add jaggery and cook, let it dissolve completely then add the mashed sweet potatoes. Check the consistency of the mixture. If you take the mixture and make a small ball it should take the shape easily.
  • Remove the filling mixture in a plate. In a bowl add maida, turmeric, salt and a little ghee. Mix well and add water little by little to make a smooth dough. Add oil and mix well. Our dough is ready.
  • Take Oddy Ecobake and place our dough ball. With the help of your hand press it nicely to form a flat chapati shape. Add the filling mixture and fold on all sides. Again, press with gentle hands to form the shape of bobbatlu.
  • Remove the bobbatlu slowly from Oddy Ecobake. Oddy Ecobake is non-sticky and grease-proof and makes the process of cooking very easy.
  • In a hot tava place the bobbatlu and cook on both sides evenly adding ghee. Our Sweet potato puran poli (bobbatlu) is ready. Eat hot as a morning or evening snack.
