Unicorn Cake

Ingredients

 

  • Oddy Ecobake
  • For Batter All-purpose flour-1 cup, cocoa Powder- 1/4 cup, sugar- 1/2 cup, unflavoured Refined oil- 1/4 cup, milk- 1 cup, baking powder- 1 tsp, baking soda- 1/4 tsp, vanilla essence- Few drops, vinegar- 1 tsp, Gel food colour- 1 drop each of Purple, blue, pink
  • For Frosting Sweetened Non-dairy Whipping cream- 1 cup
  • For Unicorn topper Dark chocolate compound- 80g Wafer cone- 1

Directions

 

  • Line a 5-inch diameter cake tin with Oddy Ecobake. The height of the tin should be 4 ½ inch. Oddy Ecobake helps in easy demolding of the cake.
  • Grind the sugar to make a fine powder. In a bowl add refined oil., powdered sugar, vanilla essence, milk, and whisk well. Add vinegar and mix well. Sieve all purpose-flour, cocoa powder, baking powder, baking soda, blend it with wet ingredients.
  • Make sure no lumps are formed. Pout the batter in cake tin. Tap to remove any bubbles. Preheat the oven on convection mode for 10 mins. Bake the cake for 40 mins at 180 degrees for 40 mins. Remove the cake after baking and let it cool down completely.
  • In a bowl add chilled whipping cream and beat for 3-4 min on high speed till stiff peaks are formed. Divide the cream in 3 equal parts and add colors in each part. Add purple, blue and green color in 3 different bowls of whipping cream. Mix well and refrigerate till we start decorating the cake.
  • Melt dark compound chocolate with double boiler method. Use Oddy Ecobake to make a cone and add melted chocolate in it. On the Oddy Ecobake sheet, make eyes, and ears of unicorn and choco chips as shown. Refrigerate for 30 mins.
  • Demold the cake and cut into 3 layers. For assembling, add one layer of sponge and apply sugar syrup in it. Add pink whipping cream and spread it evenly. Sprinkle choco chips on top. Repeat the same process for the second layer as well.
  • Add the third layer and cover the cake with blue whipped cream. Take a wafer cone and place on top of the cake. Add eyes and detailing for the unicorn like hair and ears. Our Unicorn cake is ready.
