Whole Wheat Papad

About the Recipe

Papad is a crunchy Indian-style wafer made with whole wheat flour and freshly blended spices. It is prepared and can be stored in airtight containers to roast or fry them and can be served as starters or as side dish for meals. The papads are steamed before rolling thin by using Oddy Ecobake Non-Stick Liners, since it is perfect for using in steamers and ensure steam circulation for saving cooking time. It is water-proof and heat-resistant too.

Ingredients

  • Whole wheat flour-500 g & Salt- for taste
  • Rock salt-20 g & Alkaline salt-20 g
  • Chilli flakes-2 tsp & Chilli paste-3 tbsp
  • Carom seeds- 1 tsp & Water & Oil
  • Oddy Ecobake Non-Stick Liners

Directions

  • Add one-and-a-quarter times as much water as wheat flour to a vessel. Add rock salt, alkaline salt, chilli flakes, chilli paste, and carom seeds to it and mix well until the salt melts completely.
  • Heat and boil it until it rolls over. Now add the sifted whole wheat flour to it and mix with a stick, stirring continuously until they bind together.
  • Shift it onto a plastic wrap sheet and knead well for 3 to 4 minutes. Grease your palms with oil and make the small dough balls with a hole in the center.
  • Arrange them on a sieve lined with Oddy Ecobake Non-Stick Liners. Cover and steam it for 25–30 minutes.
  • Turn off the flame, remove the Oddy Ecobake Non-Stick Liners, and transfer the steamed dough to the plastic wrap and knead again for 3–4 minutes.
  • Transfer it to a vessel greased with oil and let it cool. Pinch small balls of dough, grease your roti maker with oil, and roll flat and thin.
  • Cover the vessel of dough to avoid it drying out. Make similar papads and arrange them on a cloth, and let them dry in shade for one day and under sunlight for another day.
  • The whole wheat papad is ready. Store them in airtight containers; fry or roast them to serve.
