Aloo Vegetable Frankie

About the Recipe

This delicious aloo frankie recipe is a snack that everyone will relish and will get you compliments from even the kids. It is indeed a popular vegetarian street food option. There are a lot of variants of this snack item but this one has stuffing of potatoes.

Ingredients

 

  • 1.5 cup of wheat flour
  • 1.5 cup of maida
  • 3 tbsp of ghee
  • A pinch of baking soda
  • 3 tbsp of curd/yogurt
  • 2 tbsp of oil
  • Green chillies (finely chopped)
  • Dry spices- 1/4 tsp turmeric powder, 1/2 tsp coriander powder, 2-3 tbsp of frankie masala and 1 tsp of red chilly powder
  • 5 boiled potatoes
  • 2 tbsp of corn flour
  • Suji or semolina
  • Mayonnaise
  • Tomato ketchup
  • Veggies as per your liking

Directions

 

  • For dough, add 1.5 cup of wheat flour and 1.5 cup of maida. Then add salt according to taste and 3 tbsp of ghee to this.
  • Then add a pinch of baking soda and 3 tbsp of curd/yogurt. Mix all of this well. Drizzle some oil on your hands and set dough for making a healthier version of frankie.
  • For potato stuffing, take 2 tbsp of oil in a non-stick pan and add some finely chopped green chillies. Saute it for sometime on low flame.
  • Then add 1/4 tsp turmeric powder. 1/2 tsp coriander powder, 2-3 tbsp of frankie masala and 1 tsp of red chilly powder.
  • Now add in 5 boiled potatoes after mashing them using your hands. Put in salt according to taste and some fresh finely chopped coriander leaves as well.
  • Before binding the mixture, add 2 tbsp of corn flour. Mix all of this well.
  • Once the mixture is at room temperature, drizzle some oil to your hands and start making potato tikki or rolls in the shape of a cylinder (as shown) for the stuffing.
  • Coat these tikki with suji or semolina before shallow frying in oil. Start making rotis or chapatis with it for frankie. Don't cook them fully as we will reheat it later.
  • Now, take some oil and butter on a non-stick pan. Reheat the chapatis and then spread some coriander chutney on one side of the chapati, sprinkle some special frankie masala and the potato tikki in the middle.
  • You can also put in mayonnaise, tomato ketchup and some veggies according to your liking. Then add some cheese as well.
  • For assembling a frankie, we will use Oddy Uniwraps paper foil to pack it in the form of a roll and you can have it for breakfast or as a snack.
