Ingredients

 

  • 4 green chilies & 1 inch garlic
  • 8-10 garlic cloves & 2 teaspoons of coriander
  • 1 tsp cumin seeds & 4 cloves
  • 1 teaspoon of poppy seeds & 2 pieces of cinnamon
  • 10-12 peppercorns & Potato leaves
  • Turmeric 1/2 tsp, Red chilies 1 tsp & Salt to taste
  • Rice flour 2 tbsp, Wet coconut & A little tamarind
  • A little jaggery, 2 teaspoons of sesame seeds & 1 bowl gram flour
  • 1 onion, 1/4 teaspoon of turmeric & 1/2 tsp red chilies

Directions

 

  • Take 4 green chillies, one inch ginger, 10-12 garlic pods, 2 tsp coriander seeds, 1 tsp jeera seeds, 4 cloves, 1 tsp poppy seeds, 2 cinnamon sticks and 10-12 poppy seeds.
  • Grind all ingredients except chillies, garlic and ginger. After grinding spices, add the chopped chillies, ginr and garlic and grind with little water.
  • Now take the alu wadi leaves, wash it, clean and cut oof the tick stem. Now cut through the centre of the leaves, fold them, and cut it finely length wise.
  • Next add the grinded mixture, turmeric, salt as required, red chilli powder, tamarind pulp, jaggery, rice flour, freshly grated coconut, sesame seeds and mix well with hands.
  • The leaves will turn soft and get soaked in the mixture, then add besan and well again. Now take Oddy Ecobake papers and cut the shape of the vessel for the steaming of the alu vadi.
  • Then place the paper in the vessel and prick holes on the paper for the steam to pass and cook them uniformly. Take the alu wadi batter and with the help of fingers spread and press it evenly.
  • Now stem it for 15-20 mins. Check with a tooth pick if cooked or not. Allow it to cool and then cut it into cube size pieces.
  • Now there are two methods of serving. First is to deep fry the fresh steamed alu wadi.
  • second is to take in a pan 2 tbsp oil, add crushed 4-5 garlic pods and chopped onions and fry till it turn brown, add the termuric powder, red chilli powder, sesame seeds and steamed alu wadi fry again. Granish with coriander leaves.
