Bakery Style Crunchy Nankhatai

Many of us have sweet memories of eating Naankhatai in our childhood, very tasty and different from other biscuits and cookies, Naankhatai have a special place in our heart. Despite being hard to find in the market nowadays, you can now make bakery style crunchy and tasty Nankhatai at your home without using egg.

Ingredients

For 18 Cookies

  • All purpose flour or maida- 1 cup or 150 g
  • Ghee- 100 g
  • Sugar- 1/2 cup
  • Besan or gramflour- 1/4 cup 40g approx
  • Elaichi or cardamom flour- 1/2 tsp
  • Baking powder- 1/2 tsp
  • Baking Soda- 1 pinch
  • Salt- 1/4 tsp
  • Pista slices for decoration

Directions

 

  • Take ½ cup of Ghee or Butter in a mixing bowl, and beat it for 5 mins properly till it get whitish in color and creamy in texture. Add ½ cup of powdered sugar to it and mix it properly for 5 mins.
  • To add dry ingredients, take a sieve, and strain 1 cup Maida, ¼ cup of gram flour, 1/2tsp baking powder, ¼ tsp salt and a pinch of baking soda and ½ tsp of cardamom powder in the bowl to avoid the lumps.Mix all the ingredients with light hand
  • Divide your dough in 18 pieces, shape them as small cookies and place them in the tray lined with Oddy Ecobake Brown Baking and Cooking Paper.
  • You can use a fork or toothpick to make a design, you can skip this step also.
  • Decorate them with some chopped Pista slices, and place them in the fridge for 15 mins.
  • After 15 mins, place the tray in the microwave oven which was preheated at 180 degrees
  • Bake them for 15 mins, after 15 mins you’ll notice the light brown colors on the cookies.
  • Let them cool down for sometime and your Naankhatai are ready to serve
