Besan Burfi without Mawa or Milk Powder for Diwali

Besan burfi is a North Indian sweet recipe, especially made during festivals and celebrations. We need besan, sugar, and elaichi powder to make this sweet recipe. Ecobake helps in setting the burfi and getting a perfect shape for it without greasing the mold.

Ingredients

 

  • Mota besan ( Gram flour)-500 gm ( 4 cup )
  • Ghee-2-3 tbsp & 1-1/4 cup & Sugar-2 cup
  • Water-1 cup & Milk-2-3 tbsp & 1 cup
  • 1 teaspoon crushed Green Chilli-Ginger (or paste)
  • Green cardamom- 4-5 & Saffron- 4-5 threads

Directions

 

  • Mix mota besan with 2 to 3 tbsp of ghee and milk uniformly. Let it set for 10 minutes, or until the mixture becomes dry and powdery.
  • Grind the besan mixture in pulse mode for 10 to 15 seconds in a mixer jar. In a pan, heat the ghee and add the besan powder, sautéing it thoroughly.
  • Once the raw smell is gone, add milk to the besan ghee mixture. Prepare sugar syrup with saffron strands of one string consistency.
  • Transfer this sugar syrup to the pan and mix well with the besan mixture. Add cardamom powder to the mixture.
  • Cook the burfi until the mixture turns light brown in colour, as shown. Transfer the mixture to a mould lined with Ecobake cooking paper and spread uniformly.
  • Garnish with pista and almonds and leave it for 3 to 4 hours. Once the besan burfi is set, cut into small pieces of the desired shape.
