Ingredients

 

  • For dough: 2/3 Cup Fresh Bitter Gourd Skin, 1 Cup Coarse Wheat Flour, 1/4 Cup Handvo Dhokla Flour, 1/2 tsp Turmeric Powder, As per taste Salt, 1/4 tsp Asafoetida/Hing, 1/2 tsp Carom Seeds/Ajwain, Pinch of Baking Soda, 1 1/2 tsp Ginger Chilli Paste, 1/4 Cup Medium Sour Curd, 1 tbsp Refined Oil (For Moyan), 2-3 tsp Sugar (or Jaggery) and Water as required (For kneading the dough)
  • For Tempering- 1/4 Cup Refined Oil, 1 Dry Red Chilli, 1 tsp Mustard Seeds, 2 tsp Sesame Seeds, 1/4 tsp Asafoetida/Hing, 5-7 Curry Leaves & 1 tbsp Chopped Coriander leaves
  • Oddy Ecobake Non Stick Liners

Directions

 

  • Take fresh bitter gourd skin and grind it into a paste in a mixture jar. Transfer this paste into a bowl and then add coarse wheat flour and handvo flour.
  • Then add in the spices like salt, turmeric powder, asafoetida, carom seeds, pinch of baking soda, ginger chilli paste and medium sour curd.
  • Now put in some refined oil, sugar and mix it well to knead the dough. Preheat the steamer for sometime and line it with Oddy Ecobake Non Stick Liners.
  • Grease the palm with oil and prepare muthiyas as shown.
  • Put the plate in preheated steamer and steam muthiyas on high flame for about 10 minutes and then further 15-20 minutes on medium flame.
  • After 30 minutes, check if the muthiyas are cooked or not using a toothpick. Once done, turn off the flame and cover it with a cotton cloth.
  • Once it cools down, cut muthiyas into smaller pieces and serve them with chutney.
