Multigrain Vada

About the Recipe

Multigrain Vada is a traditional Gujarati snack which we can make easily at home and we can also eat it while travelling. Usually Gujaratis make it during Randhan Chhath. Oddy Ecobake can be used to easily flatten out the Vada balls and this way, the utensils will also be clean.

Ingredients

 

  • ½ Cup Maize Flour/Makai No Lot & ½ Cup Sorghum Flour/Jowar Flour
  • ½ Cup Ragi Flour/Nachni Flour & ½ Cup Pearl Millet Flour/Bajra Flour
  • ½ Cup Wheat Flour/Gehu ka Atta & ¼ Cup Gram Flour/Besan
  • ½ tsp Turmeric Powder & Salt as per taste
  • 2 tsp Sesame Seeds & 2 tbsp Ginger Chilli Paste
  • 1 tsp Carom Seeds/Ajwain & ¼ tsp Asafoetida/Hing
  • 2 tbsp Refined Oil (For Moyan) & ¼ Cup Medium Sour Curd
  • ¼ Cup Chopped Jaggery & Water as required (For kneading the dough)
  • Refined Oil (For frying the Vada) & Oddy Ecobake

Directions

 

  • In a bowl, take medium sour curd, add jaggery and mix it well then keep it aside for 10 minutes.In another bowl, take maize flour along with jowar flour, ragi flour and pearl millet flour followed by wheat flour.
  • Now add in gram flour, turmeric powder, salt as per taste and sesame seeds along with some ginger chilli paste. Rub carom seeds with your palm and add them to the prepared mixture.
  • Then add in asafoetida and some refined oil. Mix everything well.You can add a pinch of baking soda too if you want. Add curd jaggery mixture and knead the dough as shown and add water as needed.
  • Knead medium soft dough. Cover and keep it aside for 1-2 hours. After sometime, pinch out dough balls.
  • Line plate or chopping tray with Oddy Ecobake and then keep dough balls on top of it.
  • Keep other part of Oddy Ecobake on top of dough ball and flatten them out with the help of a katori.
  • Fry them in medium hot oil and serve them with chutney.
