Crispy Karele Ki Sabzi

Ingredients

 

  • Bittergourd- 1 kg & Gram flour-1/2 cup
  • Rice flour- 1/2 cup & Turmeric powder-1/2 tsp
  • Salt- to taste & Red chilly powder-1 tsp
  • Coriander powder-1 tsp & Cumin powder-1 tsp
  • Dry mango powder-2 tsp & Onion-2 medium
  • Capsicum-1 medium & Green chilly- 1 medium
  • Cumin-1 tsp & Oil for deep frying
  • Oil-1 tbsp & Oddy Snack Bags

Directions

 

  • Dip bitter gourd in water for at least 15 minutes so that all the impurities are washed away. Wash them in running water. Bitter Gourd should be medium in size and not too thick. It should be a bit tight as well.
  • Cut the top and bottom part of all of them.Then cut each in two equal parts as shown. Again cut the two parts further into two halves and also remove the seeds part slightly. Now cut all the pieces in Julien style as shown in the video.
  • Transfer these in a big container.To remove its bitterness, add some salt, turmeric powder and mix well. Let it rest for 10-15 minutes now.
  • Squeeze all the cut pieces with soft hands and not too hard so that there is still some water left.
  • Transfer the pieces to a flat vessel and start adding the spices one by one like salt, turmeric powder, red chilly powder, cumin powder, coriander powder, carom seeds, fennel seeds and whole coriander in crushed form. Mix all well.
  • Then add mango powder and asafoetida, Mix it again. Then put in gram flour and rice flour so that they become crispy. Let it rest for 5-10 minutes.
  • Now add some more gram flour and rice flour. Shake it like shown.Add Karela to oil on high flame for deep frying. Remove once done. Spread it evenly so that it cools down.
  • You can add these fried karela to saute vegetables. Store crispy karela using Oddy Snack Bags.
