Ingredients
- 1 cauliflower & Salt as per taste
- Turmeric powder & Oddy Uniwraps
- Wheat flour- 2 cups & Carom seeds (Ajwain)- 1/2 tsp
- Ginger garlic paste- 1 tbsp & Red Chilli powder- 1/2 tsp
- Water as required for kneading
- For stuffing: Mustard oil- 1 tbsp & Whole coriander crushed- 1 tbsp Cumin (crushed)- 1 tsp & Black peppercorn(crushed)- 7-8 Asafoetida- 1/4 tsp & Red chilli powder- 1 tsp Turmeric powder- 1/2 tsp & Coriander powder- 1 tsp Cumin powder & Salt for taste Green chilli (chopped) & Chopped onion- 2 Chopped fresh coriander leaves
Directions
- Pick tight and fresh cauliflower and dip it in water. Put some salt and turmeric in it. Keep the cauliflower in water for 15-20 minutes.
- Cut it into half and check for worms and dirt. Remove excess water from it and grate it using a thick blade. Grate the stem as well.
- Take wheat flour, add some salt, carom seeds and ginger garlic paste. Now add in the dry spices like turmeric powder and red chilli powder.
- Mix everything well and knead it into a soft dough by adding water as needed. Make some knuckles and sprinkle some water and let it rest for 10-15 minutes. Cover it with a lid.
- Take a tawa and add some mustard oil. Add whole coriander crushed, crushed cumin, crushed black peppercorn and stir it a bit. Roast it for a while. Then add asafoetida and grated cauliflower. Roast it on medium to high flame.
- Add red chilli powder, turmeric powder, coriander powder, cumin powder and salt as per taste. Mix everything well and cook further for 2-3 minutes.
- Keep the stuffing aside and let it cool down. Add chopped green chilli and onions to the prepared stuffing. Add fresh coriander as well.
- Knead the dough once again and add oil to it. Pinch out dough balls and flatten it out, fill it with stuffing and cook it on tawa.
