Gur Ke Sev

About the Recipe

Gur Ke Sev is a popular Indian sweet snack, traditionally prepared during winters. It involves a unique blend of chickpea flour, often called besan, and jaggery known as gur, hence the name Gur Ke Sev. You can store them for longer using Oddy Uniwraps paper foil and keep relishing it for days.

Ingredients

 

  • Chickpea flour (Besan) - 2 cups (200 grams)
  • Jaggery (Gur) - 1.5 cups (300 grams), crumbled
  • Ghee - 1 teaspoon
  • Oil - 2 tablespoons (and additional quantity for deep frying)
  • Oddy Uniwraps

Directions

 

  • Pour 2 tablespoons of hot oil into 2 cups of chickpea flour and mix. Gradually add water in small portions to make a soft dough.
  • Grease your hands with a little oil and smoothen the dough. Cover the dough and set it aside for 15 to 20 minutes.
  • After the dough has been set, prepare for frying. Heat oil in a deep pan or wok. Attach the largest hole plate to your Sev making machine. Fill the dough into the machine.
  • Check the oil temperature by dropping a small piece of dough into it. If it instantly comes up, the oil is hot enough.
  • Press the Sev making machine to release the Sev strands directly into the hot oil. Fry the Sev strands until they turn golden brown. Use a slotted spoon to turn and lift the Sev as needed for even frying.
  • Once done, drain them on a paper towel to get rid of excess oil. In a separate pan, add 1 teaspoon of ghee and melted jaggery. Stir it continuously on a low flame.
  • Once the jaggery completely melts, reduce the flame and add the fried Sev to it. Stir and coat the Sev well in the jaggery syrup.
  • Take the Sev out on a plate and continue the process until all the Sev is coated with jaggery. As the jaggery cools, the Sev pieces will start to harden and become crisp.
  • Once entirely cooled, store in an airtight container lined with Oddy Uniwraps Paper foil and consume within 1-2 months.
