Mango Pastry

Ingredients

 

  • Mango & 1 Cup semolina
  • 3/4 Cup sugar & Oddy Ecobake
  • 2 Pieces green cardamom & 1/4 Cup oil
  • 1/4 Cup mango puree & 1/2 CUp milk
  • 1 Drop orange gel colour & 1 Tsp baking powder
  • 1 Cup whipped cream & coloured sugar

Directions

 

  • Make circular cuts in mango and keep it aside. Now scoop out the remaining mango into a blending jar. Churn it into a fine puree. Add semolina, sugar, green cardamom in the blending jar and grind it into a fine powder.
  • Sieve in the dry ingredients like sugar mixture. To this, add oil, mango puree and gradually add milk. Whisk and mix everything well. Cover and let it rest for 10 minutes.
  • Line the baking mould with Oddy Ecobake. Whisk the prepared batter once again and now add orange food colour to it. Then put in the baking powder and baking soda. Also add some milk and mix again.
  • Transfer the batter into the mould now. Tap it well to remove air bubbles formed.Place the mould in preheated kadhai. Cover it with a lid and bake it at low flame for about 30 minutes. Insert a toothpick to see if the cake is baked properly or not.
  • To prepare frosting, take some whipped cream and whisk until stiff peak forms. The frosting is ready.Slice the upper layer followed by some frosting.
  • Add second and third layers similarly. Apply frosting on all sides. Sprinkle it with some coloured sugar. Garnish it with circular cut mangoes and cut it into smaller slices.
