Breakfast Muffin

About the Recipe

Today we are going to learn how to make breakfast muffins that are super easy to make and taste super yummy. The key ingredients of the muffins are curd, oats flour, wheat flour, and besan. Oddy Ecobake helps you line the baking tray to demold the muffins without greasing the tray with oil or ghee. Hence, there is no need for additional cleanup.

Ingredients

 

  • Thick curd - 1/2 cup & Oilive oil - 2 tbsp
  • Oregano - 1/2 tsp, Chilli flakes & Oddy Ecobake
  • Oats flour - 1/2 cup, Wheat flour - 1/4 cup
  • Besan - 1/4 cup & Salt as required
  • Grated garlic, carrot & cheese
  • Finely chopped capsicum & onions

Directions

 

  • Take the curd in a bowl, add olive oil, oregano, and red chilli flakes to it, and combine well. Add oats flour, wheat flour, and besan through a sieve to the same bowl and give them a good mix so there are no lumps.
  • Add water to make a thick batter, and add chopped veggies as mentioned. Mix well to prepare the batter. Now line the muffin tray with Oddy Ecobake as shown. Fill the molds with batter and bake them in a preheated oven for 30 minutes at 180 °C.
  • After 30 minutes, add grated cheese on top of the muffins and bake them again for 5 to 7 minutes. Take the tray and sprinkle red chilli flakes and oregano on top of the muffins. Your tasty and healthy oats breakfast muffins are ready!
