Butter with Buffalo Milk

About the Recipe

Butter is made by churning cream until butterfat and buttermilk separate. It is prepared from the separated butterfat. Keeping the butter fresh is made easier with the Oddy Ecobake.

Ingredients

 

  • Milk
  • Ice cubes
  • Cold water
  • Oddy Ecobake

Directions

 

  • Pour the milk into a heavy-bottomed pot and bring it to a boil. Stir occasionally to prevent it from sticking to the bottom of the pot. Once it boils, reduce the heat and let it simmer.
  • As the milk simmers, a layer of cream (malai) will form on the surface. Gently collect this cream and save it in a separate, airtight container.
  • Repeat this process every day until the container is filled. Transfer the malai into a vessel, add 1 tablespoon of curd to it, and let it ferment overnight.
  • A thick curd will be formed in the morning. Add a few ice cubes and add cold water to the vessel. Now take a whisker and give the malai and cold water mixture a good mix.
  • The butter will start seperating from the mixture in ten minutes. Separate the butter from the buttermilk, transfer it to a glass bowl, and wash it with cold water three to four times.
  • Now transfer the clean butter to the Oddy Ecobake and spread into a square block as shown. Cover the butter with Oddy Ecobake, refrigerate it, and use it when and as required.
