Chena Poda

About the Recipe

A popular food from the Indian state of Odisha is chena poda. The best time to make it is during celebrations. It is a confection created from curdled milk that has been thoroughly kneaded and mixed with sugar. The dish is then baked, with most of the sweetness derived from the caramelization of sugar. Since Oddy Ecobake is non-stick and reusable, lining your baking tray with it makes baking simple.

Ingredients

 

  • Full cream milk-2 lts & Vinegar-4 tbsp
  • Baking powder-¼ tsp & Roasted semolina
  • Cardamom powder-½ tsp & Sugar-½ cup
  • Chopped pistachios
  • Oddy Ecobake

Directions

 

  • Boil milk, stirring continuously, until it comes to a boil. Add vinegar or lime juice to the milk after switching off the flame.
  • Stir slowly until the milk curdles. This is chena made from milk.
  • Strain the chena into a cloth and wash thoroughly to remove the smell of vinegar. Squeeze excess water and transfer it to a mixing bowl.
  • Crumble and knead the chena well until a smooth dough forms. Add roasted semolina, cardamom powder, and baking powder to it and mix well.
  • Add sugar to it and mix well. The mixture for chena poda is ready.
  • Line a baking tray with Oddy Ecobake and transfer the mixture to it. Spread well.
  • Bake it on a preheated kadai for 40-45 minutes on a medium flame. Check it with a skewer for perfect consistency. Cool and unmold.
  • Shift it to a plate. Garnish with chopped pistachios. Cut into slices. Enjoy delicious chena poda.
