Christmas Special Plum Cake Without Egg And Alcohol

Christma Plum Cake is rich in plums and dry fruits. This Christmas try this recipe. It is eggless and without alcohol. Oddy Ecobake is a good choice to line cake tins before baking. It helps in the easy removal of cake, is reusable, and is easy to use.

Ingredients

 

  • For soaking: Orange/grape juice – 1/2 cup, Black raisins - 3 tbsp, Yellow raisins - 3 tbsp, Cherry slices - 3 tbsp, Color tutti frutti - 2 tbsp, Any other dry berries (if any) - 3 tbsp
  • For Caramel Syrup Sugar - 1/4 cup Water - 1/4 cup + (1 tbsp)
  • For Batter: Flour - 1 cup, Corn Flour - 1& 1/2 tbsp,
  • For batter: Cocoa powder - 1 tbsp, Milk – 1/2 cup (or 1/4 cup)
  • For batter: Oil - 1/4 cup, Sugar - 1/4 cup, Cloves – 1, Cinnamon - 1
  • For batter: Green Cardamom - 3, Sunth powder - 1/4 tsp (or Ginger - 1 small piece)
  • For batter: Nutmeg - 1/8 tsp, Salt - as per taste, Oddy Ecobake

Directions

 

  • Take fresh half a cup of fresh orange juice, add 1 tsp honey, 3 tbsp black raisins, yellow raisins, mixed tutti frutti, and cherries finely chopped.
  • Soak all together for a minimum of 3 hours and if possible for 2 days. Next in a deep pan, take sugar and caramelized it on low flame.
  • Once it starts melting keep stirring it and quickly add water. Once water is added, keep stirring it continuously till caramelised syrup is not formed.
  • Keep aside the syrup in a bowl. In a mixer jar, take sugar, some whole garam masala like clove, cinnamon, green cardamom, and a small piece of ginger.
  • Line the cake tin with Oddy Ecobake. In a mixing bowl, take milk (boiled and cooled at room temperature), oil, vanilla essence, the sugar garam masala powder, and grated Jaiphal (nutmeg).
  • Whisk the mixture with gentle hands. Sieve maida, corn flour, and cocoa powder and mix everything in the wet ingredients.
  • Add the caramelized sugar syrup and the soaked dry fruits along with the juice. Add chopped cashews and almonds.
  • Lastly, add baking powder and baking soda. Then add vinegar, salt and give it a good mix. Garnish with cashews, black raisins, and cherries.
  • Pour the batter into the cake tin. Place the cake tin in a deep-bottomed utensil and bake it on the low gas flame for a minimum of one hour.
  • After one hour check with a toothpick. When baking is complete remove from flame. Christmas Plum Cake is ready.
