Paan Kulfi Without Mould and Cream

About the Recipe

Kulfi is a frozen dessert made with pure full-fat milk, sugar, and a flavouring ingredient like cardamom or saffron. Sometimes cream, chopped nuts, or tutti-frutti are also added to it for flavour and richness. Paan is an Indian after-dinner treat that consists of a betel leaf filled with chopped betel nut and slaked lime, along with assorted other ingredients, including red katha paste. Make paan kulfi at home on a hot summer day. Here, Oddy Ecobake, which is convenient to use and can be cut into desired sizes, gives a perfect shape to the kulfi mould, and demoulding is made easy.

Ingredients

 

  • Sugar-1/3 cup & Cashews-10
  • Fennel seeds-1 tsp & Green cardamom-4
  • Fresh cream-200 g & Paan-2
  • Green colour-2 drops & Tutti-frutti
  • Oddy Ecobake

Directions

 

  • Grind together sugar, cashews, fennel seeds, and cardamom into a fine powder. Add fresh cream to a bowl and whisk.
  • Add the ground powder to it. Mix and whisk until they form a smooth batter.
  • Take two paans and grind into a paste. Add the grinded paan to the batter and 2 drops of green food colouring, and whisk well until no lumps are there.
  • Now add tutti-frutti to it and mix. Cover, wrap, and refrigerate for 3 hours. Line a round container with Oddy Ecobake on the bottom and also on the sides.
  • Remove the wrap after 3 hours and stir the kulfi base well. Pour it into the container, Cover and refrigerate in the freezer for 8 hours or overnight.
  • Remove the lid after freezing, divide into four, and insert a wooden stick in each. Unmould, remove Oddy Ecobake, and cut into four pieces. Serve chilled.
