  • 1/4 tsp turmeric & 1/2 tsp ajwain, 1/2 tsp red chili powder
  • 2 cup grated dry coconut & 1/2 cup sesame seeds
  • 2 tsp poppy seeds, 1/4 tsp turemric, 1 tsp garlic, 1/4 tsp ginger
  • 2 tsp red chilli powder, 1 tsp cumin & 1 tsp coriander powder
  • 1/2 tsp garam masala powder, 1 tsp chaat masala & salt
  • 2 tsp gram flour (besan), Oddy Ecobake Brown,
  • 1/2 tsp mustard seeds, 1/2 tsp cumin, 1 green chopped green chili, a pinch of asafoetida
  • few curry leaves, salt and oil as per requirement

Directions

  • Take wheat flour, rice flour, ajwain, turmeric, red chili powder, and salt. Mix well and add water as required to knead a firm dough. Add 1 tsp oil and knead again. Cover and let the dough rest for 5-10 mins.
  • Roast grated dry coconut on low flame till it turns light golden brown. Remove it from the flame and roast the sesame seeds and poppy seeds separately for 1-2 mins. Cool it and crush it with your fingers to make it finer.
  • Add crushed garlic and ginger, turmeric, red chili powder, coriander powder, cumin powder, garam masala, chat masala, and salt as per taste to the roasted ingredients. Mix well.
  • Knead the dough once again and divide it into big medium size balls. Roll out a chapati, and grease it with oil. Spread the dry filling evenly. Press the filling with the rolling pin. Roll the chapati tight.
  • Apply water at the edge and seal it. Roll it well and seal the corners. Cut into a small roll diagonally. Prepare a batter for binding with gram flour (besan), salt, and water.
  • Dip only the sides of the vadi in the batter and place it on a tray lined with Oddy Ecobake Brown. Air fry for 7 mins on 700C. Flip sides after 3-4 mins.
  • Next give the vadi tadka in 2 tsp oil, 1/2 tsp mustard seeds, 1/2 tsp cumin, 1 green chopped green chili, a pinch of asafoetida, and a few curry leaves. Saute the vadi in the oil for 1 to 2 mins.
