Crunchy Besan Papadi

Ingredients

 

  • 1.5 cup chickpea flour (besan)
  • 1/2 tsp carrom seeds (ajwain)
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp tumeric (haldi powder)
  • 1 tsp coriander powder (dhaniya powder)
  • 1 tsp red chili powder
  • 1/4 tsp asafoetida (hing)
  • 4-5 crushed black pepper corns
  • Oil & Salt as per taste

Directions

 

  • Seive the besan before use. Add ajwain and jeera (slightly scrush with palms), tumeric powder, coriander powder, red chilli powder, hing and salt as per taste. Mix well with hand.
  • Add 3 tsp oil and mix all the dry ingredients well with oil. The dry ingredients should form a rough shape when held tightly in hands. Add crushed black peppercorns and mix.
  • Knead a firm dough by slowly adding water. Cover dough for 10 mins. After 10 mins, take some oil on fingertips and knead the dough again.
  • Make two portions of the dough and roll into a chapati. Keep it thick and not too thin. Cut out circles with help of a small bowl or cutter. Prick the papdi with a fork or knife.
  • Heat oil in khadhai, fry the papdi on low flame till light golden brown. After frying, place the papdi on Oddy Uniwrap to absorb all the excess oil and healthy eating.
