Easy Aloo Vadi

About the Recipe

A famous snack that is popular in Maharashtra and Gujarat. The leaves of Colocasia or Alu are stuffed and rolled. In order to make this delicious snack, they are first steamed and then shallow fried or deep fried. Oddy Ecobake cooking Paper circles can be used to line the steamer, it has holes which is perfect for steaming.

Ingredients

 

  • Garlic 3-4 pods
  • 4-5 green chillies
  • Coriander leaves
  • Gram flour 1 cup
  • Salt as required
  • asafetida 1 pinch
  • Chilli powder 1 tbsp
  • Jeera 1 tsp
  • Oil for frying
  • Colocasia leaves 10-12
  • Jeera 1 tbsp
  • Roasted crushed groundnut powder
  • Chilli powder ½ tsp

Directions

 

  • In a bowl add gram flour, salt, asafetida, water and make a paste. Make a coarse paste adding garlic, green chillies, coriander leaves, jeera and add it to the batter. Take Colocasia leaf and turn it to the back side. Apply the gram flour batter and fold it as shown in the video to make vadis
  • Now the vadis needs to be steamed. In a steaming plate add the Oddy Ecobake cooking paper circles and place the vadis on it. Steam it for 10 mins. The Oddy Ecobake is non-sticky, so it makes steaming vadis a breeze.
  • For the tempering, in a kadai add oil, jeera and the vadis. Roast for a few minutes. Add 3 tbsp of roasted groundnut powder and chilli powder. Give it a toss and your hot flavorful vadis are ready to serve.
