Easy Coconut Cookies Recipe Without Egg

Yummy Coconut Cookies are everyone’s favorite. This coconut cookie recipe is eggless, tasty, crunchy, and delicious. It can be served with milk for kids or enjoyed just as a cookie. This recipe shows both oven and gas cooking methods. Line the baking tray and cake tin with Oddy Ecobake. No need to grease or butter the tray or vessel.

Ingredients

 

  • All purpose flour or maida- 1 cup or 150 g
  • Unsalted Butter- 100 g
  • Icing sugar- 2/3 cup or 135g approx
  • Desiccated Coconut powder- 1/2 cup 50g approx
  • Baking powder- 1/2 tsp
  • Salt- 1/4 tsp, Oddy Ecobake
  • Desiccated coconut powder for decoration- 1/2 cup

Directions

 

  • Take a baking try and an 8 inch cake tin. Line them with Oddy Ecobake. Take 100 gram unsalted butter (at room temperature).
  • Beat it for 2-3 mins till fluffy. Add 2/3 cup icing sugar, Mix and beat for 2-3 mins till light and fluffy. Buttercream has become light and fluffy.
  • Add 1 cup maida, 1/4 tsp salt, 1/2 baking powder to the buttercream. Sift all ingredients together. Add 1/2 cup dessicated coconut powder.
  • Mix roughly. Combine everything together. Next add 2 tbsp milk and mix well. Don't knead a dough, just combine the ingredients together like a dough.
  • Take out small portions from the dough and give it shape of a ball. Flatten a little bit like we make peda. Coat cookie with coconut powder.
  • Keep cookie in baking tray. Make all cookies in similar manner. 18 cookies can be made from this dough.
  • Keep some cookies in baking tray, some in cake tin. Preheat the khadhai on medium heat for 5 mins. Bake the cookies for 20-25 mins on low flame.
  • Oven is preheated in convention mode. Bake the cookies for 16 mins. Allow the cookies to cool for an hour. Coconut cookies are ready.
