Eggless Sugar Free Raisin Cake

About the Recipe

Sugar-Free Raisin Cake is a moist, fluffy, delicious, and healthy cake. It is eggless also. While baking cakes use Oddy Ecobake to line the cake tin. No need to grease with oil. Oddy Ecobake is grease-free, healthy, and easy to use.

Ingredients

 

  • All purpose flour or maida- 1 and 1/4 cup or 180 g
  • Jaggery or gud powder- 1/2 cup + 2 tbsp
  • Refined oil- 1/4 cup
  • Milk- 1/2 cup+ 2 tbsp approx
  • Baking powder- 1 and 1/2 tsp
  • Baking soda- 1/4 tsp
  • Vanilla essence- 1/2 tsp, Vinegar- 1 tsp
  • Raisins or kishmish- 4 tbsp + 2 tbsp for decoration

Directions

 

  • Take a 6-inch cake tin and line it with Oddy Ecobake. Preheat oven to 180-degree celsius in convention mode.
  • For the batter, in a bowl take refined oil, jaggery powder, milk (at room temperature) and mix all ingredients well.
  • Next add vinegar, vanilla essence. Mix well. Now keep a strainer and sieve dry ingredients - maida, baking powder, baking soda.
  • Mix the ingredients with cut and fold method. Add 2 tbsp milk if batter is thick. Mix well till smooth consistency.
  • Add 4 tbsp raisins give it another mix. Transfer the batter to cake tin and tap the tin.
  • Add some more raisins as toppings. Put the cake tin in oven and bake for 35 mins. After 35 mins check the cake with a knife or toothpick. Allow it to cool.
