Eggless No-Oven Pineapple Cake

The pineapple cake is made from whipped cream smothered between soft layers of sponge cake and topped with slices of pineapple. This cake recipe is definitely one you must try if you are looking for an eggless cake. The Oddy Ecobake liner paper is used to line the cake tray to make a spongy, non-sticky cake.

Ingredients

 

  • Maida-2 cups & Powdered sugar-1 cup
  • Sunflower oil-1/2 cup & Milk-1 cup
  • Vinegar-1 tsp & Baking powder- 1 tsp
  • Baking soda-1/2 tsp & Vanilla essence
  • Milk powder-4 tsp & Non- dairy cream- 1.5 cup
  • Canned/cooked pineapple & Cherries
  • Oddy Ecobake pre-cut circles

Directions

 

  • Prepare the baking tin by lining it with Oddy Ecobake. Make buttermilk by adding vinegar to milk. In a bowl, combine buttermilk, oil, milk, vanilla essence, sieved maida, powdered sugar, baking powder, baking soda, milk powder, and salt.
  • Mix well with milk, little by little, until you get a soft batter. Transfer the batter to baking tray and tap it to remove air bubbles. Bake the cake for 20 minutes on medium heat in a closed, deep-bottomed vessel. The cake sponge is ready.
  • Chop fresh pineapple pieces. Beat the cold whipping cream until you get stiff peaks. Cut the cake sponge into 3 layers. Frost the cake with whipping cream, pineapple syrup, and a few chopped pineapples. Repeat the process for three layers.
  • Frost the cake with cream all over and spread it evenly. Decorate the cake with cream filled in a piping bag. Decorate the cake with cherries and pineapple pieces. The pineapple cake is ready.
