Ingredients
- 1 cup Ghee/Butter
- 1 cup Sugar
- 1 cup Milk
- 4 and 1/2 cup Maida
- 1 pinch Salt
- 1/4 tsp Cardamom
- Oil
Directions
- Take regular sugar and grind a fine powder in a mixer, along with elaichi pods. Then in a pan, pour milk (boiled and cooled at room temperature) and add the powdered sugar and elaichi.
- Mix it on a low flame till sugar dissolves, allow it to cool. Next in a falt bottomed plate, take maida, add a pinch of salt, mix roughly. Then add melted ghee and mix well.
- All the dry ingredients should be well coated with ghee. Then add the milk sugar mixture and kneed a soft dough.
- If required, add extra maida, if the dough is too liquid or milk is extra. Cover and let the dough rest for 20 mins. Then kneed it again, and divide the dough into two parts.
- On Oddy Ecobake, roll out one part of the dough. Then take a bottle cap and cut out a shape of kaju. Use only one side of the cap like a semi circle.
- Cut out the kaju shankarpali from the entire dough. Heat oil in a kadhai. Fry the kaju shankarpali till golden brown in small batches.
