Layer Karanji

Karanji is a Diwali delicacy that is loved by many in India. Layered Karanji is a finer version of normal Karanji, in which the outer cover has many layers that not only melt in the mouth but also look great. Oddy Uniwraps is used to arrange the karanjis without getting stuck to the plate. It is Non-Stick, Grease-Locking and Moisture Balancing.

Ingredients

 

  • semolina-200 gms & grated dry coconut- 50 gms
  • wheat flour-1 small cup-50 gms & ghee
  • cardamon-nutmeg powder & dry nuts
  • 1 cup full powder sugar
  • cornflour- 1 cup- 50 gms & 2 tbsp ghee
  • 250 gms all purpose flour & 1/2 sp salt

Directions

 

  • Roast semolina in ghee until it turns aromatic, then allow it to cool. Roast wheat flour in ghee in a pan until it turns golden. Roast the grated coconut on a low flame and allow it to cool. Roast nuts in ghee and allow it to cool. Mix everything on a plate to prepare saran.
  • Add sugar and cardamom-nutmeg powder to the mixture and mix well. Mix corn flour with ghee and prepare a paste. Prepare the dough by mixing maida, hot ghee, and salt with water and letting it rest for 30 minutes. After 30 minutes, divide the dough into three equal parts.
  • Flatten the balls into thin rotis. Layer the chapatis with the cornflour paste as shown. Roll the layered chapatis and cut them into small pieces. Flatten the pieces, fill them with Saran, and seal the pieces with milk. Fry them in oil, and your layered karanji is ready.
