Mango Cold Cake

Ingredients

  • 1/3 cup sugar powder
  • 3 tbsp oil
  • ½ cup milk
  • 1 tsp vinegar
  • ¾ cup all purpose flour
  • 1.5 tbsp cocoa powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 tbsp milk 1 cup ripe mango ¼ cup sugar
  • 1 cup ripe mango
  • ¼ cup sugar
  • 1 tsp corn flour
  • ¾ cup whip cream
  • Chocolate circles
  • White choco chips

Directions

  • In a bowl add sugar powder and oil. Whisk and mix it well. In a bowl mix milk with vinegar, stir let it rest for 10 mins. It turns into buttermilk
  • Now add buttermilk to the whipped sugar and whisk. Sieve all purpose flour, cocoa powder, baking powder, baking soda add it in milk mixture. Whisk and mix well. Add milk and whisk again.
  • Line the baking mold with Oddy Ecobake baking paper. Oddy Ecobake is chlorine free and baking in it is hassle-free. Pour the cake batter into the baking mold and tap the mold to set cake batter evenly.
  • Cover and preheat the cooker for 5 mins for baking. Place the mold, cover and bake the cake at low flame for 30 mins. Check whether the cake is cooked by sticking a toothpick. If it comes out clean, the cake is fully baked
  • Take ripe mango and blend for a minute. Transfer it to a pan, add sugar, corn flour, stir and cook for 5 mins. Add whip cream in a bowl whisk until fluffy. Add mango puree and mix well.
  • Demolding becomes easy with Oddy Ecobake as the food does not stick in the baking paper. Slice the cake into three layers. Apply sugar syrup and mango frosting over it.
  • Place the middle layer add sugar syrup and again add the mango frosting. Repeat for the top later as well. Apply the frosting on the sides of the cake.
  • Add mango glaze on top of it and spread it evenly. Then cut the edges of the cake and finally cut it into pieces. Garnish with chocolate circles, frosting and Choco chips
