Matar Karanji

About the Recipe

Many of you must have tried sweet Karanji but today I am sharing an easy recipe for Matar Karanji. An easy and tasty snack filled with a crispy and spicy filling. Ingredients

 

  • All- purpose flour 1 cup
  • Fine semolina 2 tbsp
  • Salt
  • Ghee 2 tsp
  • Garlic 7-8
  • Ginger 1 inch
  • Green chillies 3-4
  • Fennel seeds 1 tsp
  • oil 2 tsp
  • Cumin 1/2 tsp
  • ready ground masala
  • Asafoetida 2 pinch
  • Turmeric 1/4 tsp
  • Green peas 1 cup
  • Coriander powder / coriander powder 1 tsp
  • salt
  • Boiled potatoes 2
  • Cashew nuts 2 tsp
  • Amchur powder 1/2 tsp
  • Coriander 1/2 cup
  • Oil for frying

Directions

 

  • In a plate take all-purpose flour, fine semolina, salt and mix well. Add 2 tbsp melted hot ghee and mix well. Now add water little by little and make it into a smooth dough. Let it rest for half an hour.
  • In a mixer add garlic, fennel seeds, chillies, and ginger and grind it into a paste. In another mixer add peas and grind into a coarse paste.
  • In a small bowl take boiled potatoes and mash it nicely with a fork. For stuffing, heat oil in a pan, add jeera, add green chili paste mixture and toss for half to 1 minute.
  • Add asafoetida and turmeric and mix well. Now add ground peas paste, salt and sugar, mix well. Sprinkle some water and mix well and cover the lid and cook for 1 min. Add coriander leaves, mix and switch the gas off. Let the mixture cool down.
  • Take the dough and make small balls. Make shapes like puri. It should neither be thick nor thin. Now add the stuffing and apply water with your finger tips on the sides and fold the karanji. You can use a karaji cutter or simply keep the karanji on Oddy Uniwraps which is non-sticky.
  • You can also use karanji molds if you want. Add oil in kadai and one it is medium hot add the karanji, fry it from low to medium flame. Cook on both sides till it gets a nice golden flavour.
  • Remove the karanji in Oddy Uniwraps. Oddy Uniwraps is grease-proof and eco-friendly. Once the karanji are cooled completely you can store it in air tight containers.
