No Alcohol Christmas Fruit Cake

About the Recipe

We’re going to prepare the plum cake today, which is prepared without alcohol using dry fruits and caramelized sugar. We are going to prepare this in an oven. Without additional cleanup, Oddy Ecobake assists you in lining the cake mold to give your cake the perfect shape.

Ingredients

 

  • 3 Tbsp Manuka/Black Raisin & 3 Tbsp Candied Cherry
  • 3 Tbsp Tutty Fruity & 3 tbsp Apricot
  • 3 Tbsp Chopped Cashew nuts
  • 3 Tbsp Chopped Almonds & 3 Tbsp Chopped Walnuts
  • 3 Tbsp Raisins & 1/2 Cup Orange Juice
  • 3-4 Tbsp Warm Water, 3 Eggs & 1/2 Oil
  • 1 Tsp Vanilla Essesnce & 1/8 tsp Nutmeg Powder
  • 1/4 Tsp Cinnamon Powder & 1/4 Tsp Dried Ginger Powder
  • 1.25 cup Maida & 1/2 Cup Powdered Brown Sugar
  • 4 Tbsp Cocoa Powder & 1 Tsp Baking Powder
  • 1/4 Tsp Baking Soda & Oddy Ecobake

Directions

 

  • In a pan, soak the chopped fruits in orange juice, water, and lemon juice. You can soak them for 4 to 5 hours. When you do not have time, you can cook the soaked, chopped fruits until they start boiling. Switch off the stove and keep it aside.
  • To prepare caramel syrup, melt sugar in a pan until it caramelizes. Add water to the caramel and let it boil. Switch off the stove and let it come to room temperature. In a bowl, beat brown sugar, oil, and eggs together.
  • Add the spice powders to the mixture and mix well. Sift the dry ingredients into the wet ingredients and mix well to prepare the cake batter. Add the caramel syrup and soaked dry fruits to the batter and mix well. Transfer the batter to a cake mould lined with Oddy Ecobake.
  • Garnish with chopped dry fruits and bake the cake for 55 to 60 minutes in a preheated oven at 160 degrees Celsius. Once the cake is baked and cooled, demold it and remove the Oddy Ecobake. Cut the cake into slices and enjoy!
