No Oven Fluffy Rasmalai Cupcake

About the Recipe

No oven-fluffy Rasmalai Cupcake is easy to prepare and delicious recipe. It has a cotton-like texture. No need for an oven, eggs or mold. It can be prepared in less time. After baking cupcakes, store them in Brown Oddy Uniwraps. It is safe to use and keeps food fresh for longer hours. It will also prevent cupcakes from getting dry.

Ingredients

 

  • 1/2 cup maida & 1/4 cup milk powder
  • 1/3 cup almond flour & 1/3 cup powdered sugar
  • 1/2 tsp baking powder & 1/4 tsp baking soda
  • 1/8 cup refined oil/butter & pinch of saffron
  • 1/2 tsp cardamom powder & 100 gm white chocolate
  • pistachio, almond flakes, saffron, dry rose petals for garnishing
  • Brown Oddy Uniwraps

Directions

 

  • Preheat the kadhai for 10 mins. In a bowl, take half a cup of milk, a pinch of saffron, 1/2 tsp elaichi powder, and 2 tbsp refined oil. Whisk and mix the ingredients.
  • Place a sieve on top and add in half a cup maida, 1/4 cup milk powder, 1/3 cup almond flour, 1/3 cup powdered sugar, 1/2 tsp baking powder, and 1/4 tsp baking soda and strain them together into the liquid ingredients.
  • Now mix all the ingredients well into a smooth lump free batter. Drain the sweet water from Rasgulla and cut it into two halves and keep it aside.
  • Now take small round katoris and line them with cupcake paper. Pour 1 tbsp of batter into the cupcake moulds. Place the half-cut rasgulla in the batter and with a pipping bag add the remaining batter.
  • Don't fill it completely as the batter will rise on baking. Garnish with chopped pistachios. Now place the cupcakes in a pre-heated kadhai and cover it. Bake it for 5 mins on high flame and 25 mins on low flame.
  • Next, melt white chocolate and add a pinch of yellow dust color powder. After the cupcakes are baked, remove them from the kadhai and allow them to cool completely at room temperature.
  • Dip the top part of the cupcakes into the melted white chocolate and garnish with chopped pistachios and almonds, saffron, and dried rose petals.
  • Keep the cupcakes in the fridge for 10 mins to set the white chocolate. To keep the cupcake fresh and prevent it from drying out, store them in Brown Oddy Uniwraps. Make an envelope and seal the sides and place the cupcakes inside it.
