An effortless handmade Indian teatime treat with a soft and crumbly texture is nankhatai. This eggless recipe can be prepared using either besan or atta. The biscuits are baked evenly on the baking sheet without sticking when using Ecobake parchment paper.

Ingredients

 

  • All Purpose Flour / Maida - 1 cup / 120 grams
  • Gram Flour /Besan - ½ cup / 60 grams
  • Ghee / Melted Butter / Oil - ½ cup / 120 ml
  • Powdered Sugar - ½ cup / 100 grams
  • Cardamom Powder - ½ tsp & Baking Powder - ½ tsp
  • Baking Soda - ¼ tsp & Milk - 1 tbsp or as needed
  • Pista - a handful finely chopped

Directions

 

  • Pre-heat the oven to 180 degrees C. Take flour, gram flour, baking soda, and baking powder in a bowl and mix well.
  • Take ghee, powdered sugar, and cardamom powder in a bowl and use a whisk to mix well. Now add in the flour mix and fold well.
  • Add milk and knead into a soft dough. Take a small portion of the dough and roll it into a ball. Dip it in chopped pista.
  • Spread Ecobake parchment paper on the baking tray and arrange the biscuits on the tray. Bake for 15 to 20 minutes, or till golden.
  • Remove it from the oven and let it cool completely. Store it in an airtight container and serve.
