Poush Vada

About the Recipe

Poush vada (or posh bada) is a vada or fried fritter snack made from lentils and mixed spices. It is one of the famous badas from Jaipur, the pink city of Rajasthan. It is generally made in the months of December and January. You can have oil-free vadas when served on a plate lined with Oddy Uniwraps, which keep them warm when packed.

Ingredients

 

  • Split green gram -1 cup & Urad dal or chola dal
  • Pepper corns-10 & Cloves-7
  • Ginger- 1 inch & Green chili-5 + 6
  • Turmeric powder- ½ tsp & Coriander leaves
  • Coriander & Salt – as per taste
  • Hing-1/4 tsp & Kasuri methi & Oil for frying
  • Oddy Uniwraps

Directions

 

  • Soak the split green grams overnight and drain the water from them, washing them a few times. This will remove the husk of the green gram. Also soak urad dal overnight, drain water, and keep aside.
  • Grind both dals separately, take them into a vessel, and mix them together to make a smooth batter. Crush cloves and garlic into a fine powder.
  • Crush the ginger into a paste and set aside. Add chopped green chillies, turmeric, crushed ginger, crushed pepper powder, coriander leaves, crushed coriander, hing, and salt to the batter and mix well.
  • Now add crushed Kasuri methi to it and mix. Heat the oil and add a teaspoon of salt to it. Drop the mixed batter onto it using a spoon and let it cook on a low flame.
  • Remove them from the oil when they become golden brown. Split green chillies and fry them in hot oil, then sprinkle chat masala on them.
  • Serve the poush vada along with the chilli on a plate lined with Oddy Uniwraps to keep them hot and remove excess oil.
