Rasmalai Pastry for Diwali

Hey! Do you have guests at home? We have soft, moist, and delicious eggless rasamalai pastries that can be made in a flash and without the use of an oven. Here we have used Oddy Brown Ecobake, which is chlorine-free and reusable. That helps our cake come off easily.

Ingredients

 

  • Milk- 1/2 cup+3 tbsp & Vinegar-1.5tbsp
  • Lemon juice, 1 tbsp & Powdered sugar-1/2 cup + 2 tbsp
  • Oil - 1/4 cup & Vanilla essence - 1 tsp
  • Yellow Gel food colour - a few drops
  • Maida(all-purpose flour)-1 cup + 2 tbsp
  • Baking powder-1 tsp & A pinch of salt
  • Rasamalai-300 g & Chilled whipping cream - 1+1/2 cup
  • Dry fruits, Rose petals & Golden sugar balls
  • Oddy Brown Ecobake

Directions

 

  • Place a deep-bottom pan with a wire stand inside it on the stove for 10 minutes, covered with a lid. Put the milk in a bowl and mix it with vinegar and lime juice. Stir well and keep it aside.
  • After 10 minutes, stir in the powder, sugar, oil, vanilla essence, elachi powder (if using), and a drop of yellow gel food color. Add maida,baking powder,and a pinch of salt to a sieve and mix them into the milk batter without lumps.
  • Now transfer the batter to the cake tin lined with Oddy Brown Ecobake baking paper and place it in the preheated pan for 50 minutes on a low flame. The pastry sponge is ready after 50 minutes.
  • Now add rasmalai syrup to the chilled whipping cream and beat well to form stiff peaks. To make rasmalai sugar syrup,add rasmalai syrup to sugar syrup and keep it. Cut the pastry sponge into 3 parts.
  • For frosting,take one layer of cake and moisten with rasmalai sugar syrup. Then add whipping cream to it. Place a few pieces of rasmalai on it. Repeat the process for the other 2 layers.
  • Then frost the cake sponge with whipping cream all over it . Now frost the pastry sponge with yellow whipping cream. Cut the sponge into pieces and place rasmalai on each piece of pastry and garnish with dry fruits.
  • Add dry fruits on the bottom sides. Decorate with washed rose petals on each piece and gold sugar balls sprinkled all over them. And yes!! Our spongy,tasty rasamalai pastries are ready.
