Soft Fruit Cake in Steel Glass

About the Recipe

The tutti-frutti cake is a cake made from tutti frutti (candied fruits) made from all- purpose flour, powdered sugar, and fruit essence. This is a simple yet delicious recipe that tastes as good as store-bought ones. This recipe is made without eggs, and no oven is needed. The Oddy Ecobake brown paper circles are used in the recipe to make a soft cake that is easy to Unmould after baking.

Ingredients

 

  • All-purpose flour or maida- 1 and 1/4 cup or 180g
  • Refined oil- 1/4 cup or 50ml & Milk- 3/4 cup (1/2+ 1/4 cup) or 150ml
  • Sugar- 1/2 cup or 100g, Baking powder- 1 tsp & Baking soda- 1/4 tsp
  • Mixed fruit essence- 1/2 tsp, Lemon juice- 1 tsp & Tutti frutti- 1/4 cup+ 1 tbsp
  • Yellow liquid food colour- 4-5 drops & Salt- 2 pinch

Directions

 

  • Take two stainless steel glasses. Grease them with oil. Line them with oddy Ecobake brown cooking paper cut into circles at the bottom.
  • In a bowl, combine the oil, powdered sugar, salt, and mixed fruit essence (or vanilla essence) and mix well with half a cup of milk.
  • Add the sifted dry ingredients to it, mix well, and make it into a smooth, light batter. Add yellow liquid food colour, ¼ th cup of milk, and lemon juice to it and mix well.
  • Add tutti frutti to it and mix lightly. Fill the batter into the prepared glasses until they are half full. Bake the cake for 25–40 minutes in a preheated, covered kadai.
  • Check if the cake has baked. Let it cool. Cut into slices. The soft and spongy tutti-frutti cake is ready.
