Spongy and Soft Butterscotch Cake

About the Recipe

Every single time, this butterscotch cake turns out perfectly because it is moist, soft, spongy, and not excessively sweet. To the standard vanilla sponge cake, we have added butterscotch chips. With the help of Ecobake parchment paper, you can easily remove the cake from the mold and get the ideal shape without using any oil.

Ingredients

 

  • All Purpose Flour / Maida - 1 ½ cup / 180 grams
  • Sugar - ¾ cup / 150 grams & Baking Soda - ½ tsp
  • Baking Powder - 1 ¼ tsp & Salt a pinch
  • Yogurt / Curd - 1 cup / 240 ml
  • Oil - ½ cup / 120 ml & Vanilla Essence - 1 tsp
  • Milk as needed to thin the batter a little
  • Butterscotch nuts/chips - 3/4 cup

Directions

 

  • Add all the wet ingredients to a mixing bowl and mix well. Let it reset for a while. In the meantime, coat your butterscotch nuts with some maida.
  • Then add the dry ingredients to the wet ingredients through a sieve and give them a good mix.
  • Add butterscotch nuts to the cake batter and mix well. Transfer the batter into a cake mold lined with Ecobake parchment paper.
  • Bake the cake for 50 to 55 minutes in a preheated oven at 180 °C. Once the cake is baked and cooled, cut it into pieces and enjoy.
