Eggless Suji Mango Cake

Here is a very easy recipe of Suji/Samolina cake which includes the goodness of mangoes too. It is very simple and easy to make and at the same time, it is healthy too. Oddy Ecobake helps in getting the perfect cake without any greasing and no need for cleaning afterward.

Ingredients

 

  • Suji/Semolina/Rava- 1 cup or 180g
  • Sugar- 1/2 cup or 150g
  • Ripe Mango chopped - 1 cup
  • Milk- 1/2cup or 120ml
  • Refined oil- 1/4 cup or 60ml
  • Milk powder- 1/4cup
  • Baking powder- 1tsp
  • Baking Soda- 1/4tsp & Vanilla Essence- 1/2tsp
  • Chopped dry fruits for garnishing
  • Oddy Ecobake

Directions

 

  • Take 1 cup chopped mango and grind it to make a fine, smooth paste. Strain the mango paste so that there are no lumps. 
  • Add 1 cup of suji/semolina to this and 1/4 cup milk. Mix all of this well and again add 1/4 cup milk. Mix it well and then let it rest for about 30 minutes.
  • Transfer suji mango mix into the blender and then add vanilla essence, sugar, refined oil, milk powder and blend it till it becomes a smooth paste.
  • Transfer the prepared mixture to a glass bowl and keep it aside for sometime. Line the cake tin with Oddy Ecobake. Add baking powder and baking soda to the batter.
  • Transfer the batter to the cake tin. Garnish it with chopped almonds and pistachios. 
  • Preheat the pan for about 5 minutes on medium flame. Bake the cake for 35-40 minutes on low medium flame.
  • After 40 minutes, check if the cake is cooked properly or not using a toothpick.
  • Once the cake cools down, demould the cake and cut it into smaller pieces. Delicious suji mango cake is ready to serve.
